Potato Salad

Ingredients:
Potatoes - 5 large
Sweet Pickle Relish - to taste
Dill Pickle Relish - to taste
Black Olives (chopped) - to taste
Mayo (can use light) - equal parts with sour cream (maybe 1 cup?)
Sour Cream - equal parts with may (maybe 1 cup?)
Mustard - enough to give salad light yellow color (maybe 4 Tbs?)
Cheese (shredded) - to taste

Directions:
Bake potatoes until soft (350 degrees F for 1.5 hours?)
Skin potatoes and cut into small pieces.
Add pickle relish and black olives.
Add mayo, sour cream, and mustard until creamy. Extra is okay as some will soak into the potatoes.
Add cheese if desired.
Cool in refrigerator.

Chicken Pot Pie

Pie Crust
Ingredients:
Flour - 2 cups
Canola Oil - 2/3 cup
Ice Water - 6 Tbs

Directions:
Split in half. Use rolling pin to flatten. Cut to appropriate size. (I usually cut one inch around the outside of the upside down pie pan for the bottom crust and 1/2 inch for the top crust.
Either roll between two plastic sheets or generously flour the counter/surface.
**Makes 2 crusts

Pie
Ingredients:
Cream of Chicken Soup - 1 can
Cream of Potato Soup - 1 can
Chicken - about 5 small tenders
Peas - 1/2 can
Carrots - 1/2 can
Onion - 1/4 medium
Celery - 3 stalks
Cheese (shredded) - to taste
Salt - to taste
Pepper - to taste

Directions:
Pre-heat oven to 375 degrees F
Boil/fry/grill chicken. Then shred.
Mix soups, chicken, peas, carrots, onion, celery, cheese, salt, and pepper in a bowl.
Lay down 1 uncooked pie crust in pie pan.
Fill with mix.
Lay second pie crust on top. Crimp the edges with a fork and generously make slits in the top of the pie to vent.
Cover crimped edges with aluminum foil to prevent burning/blackening.
Cook for 45min to 1 hour. 
*Aluminun foil can be removed after 30 min.

Family Pasta

Ingredients:Onion (one medium chopped)
Bell pepper (one large chopped)
Banana pepper (one or two chopped)
Garlic (one clove minced)
Spinach (3 large handfuls or 1/2 bag coarsely chopped)
Canned chicken (two cans)
Oregano (to taste)
Basil (to taste)
Diced tomatoes (two cans unstrained)
Mini penne pasta (one box)
Cheese (to taste)

Directions:
Sautee onions and peppers. When nearly done throw in garlic and herbs. Add tomatoes (with juice). Add spinach and chicken. Let boil at least 10 minutes. Boil pasta. Strain pasta. Mix pasta and sauce. (do not drain extra juice, it will soak in to the noodles. Top with cheese to taste.
